Use this to make a healthier version of my Quad City Carrot cake
Lower Carb Carrot Cake
1 cup butter
1/3 cup eggwhite powder
1 bottle Bolthouse carrot juice
2 cups King Arthur Keto Flour
3 t ground cinnamon
3 t ginger
1 t baking soda
1 t vanilla
1/2 teaspoon salt
3 cups shredded carrots
1 cup walnuts (optional)
Preheat oven to 350F
Grease 2 round pans or ONE 9x13
Put the Flour, Baking powder, baking soda, eggwhite powder, salt, cinnamon and ginger in a big bowl and whisk to combine and break up lumps.
Put the swerve, softened butter, vanilla and carrot juice in a blender and blend, then pour this over the flour in the bowl and mix then add the carrots and mix, then pour in pan, smooth out top and bake 30 mins
You dont have to be as worried about raw eggs since this has eggwhite powder in it, and eggwhite powder is safe if used without cooking
