This cake is a boxed mix, but the water was replaced with carrot juice, the filling is homemade carrot cake jam, and its topped with carrot chips.

Carrot Juice

Prepare this cake using carrot juice instead of the water

Carrot Cake Jam

2 cups Dried Carrots
1 small bottle Bolthouse Carrot Juice

 2 cups water
2  cup Sugar (Or An Allulose Blend)

2 t Cinnamon 

2 t Ginger 

1/2 stick butter

Boil all together in a pot until thick and jammy, cool completely. You will have loads left for toast in the morning!

Store bought Cream Cheese Frosting with a little lemon juice added
