 Keto Japanese Fauxtato Salad
 
 
1 roughly diced small or medium Kohlrabi
1/3 cup canned chickpeas, mashed
1 cucumber, finely sliced, placed in a bowl, salted , sweated 10 mins and squeezed)
1 small sliced carrot
1/4 cup chopped ham
1/4 cup sliced onion, soaked in water 15 mins, drained
1 hardboiled egg, chopped
1/4-1/3 cup mayo
Salt and Pepper
1/2 t potato flavor
Salt
Pepper
Dash White Vinegar
1 t sweetener

Cook the Kohlrabi, Carrot and Egg in water in the same pot (less dishes to clean for YOU) till the carrots are fork tender. drain all, peel the egg and place it and all the ingredients together.
Chill and serve
