Mole Cupcakes With Mexican Chocolate Buttercream Frosting

Mole Cupcakes With Mexican Chocolate Buttercream Frosting

Preheat the oven to 350oF
Put cupcake papers in 12 holes of a cupcake pan


 1 cup sugar
1 box Dona Maria Ready to Eat Mole
     2 eggs

Beat the above together in a bowl with a handmixer

       1 1/2 cups flour
    2 teaspoons baking powder

Whisk the above together in a bowl and then add it to the mole in the bowl and beat together till smooth.
Spoon carefully into the cupcake papers

Bake 30 minutes


Frosting

2 sticks unsalted butter
2 cup confectioners sugar
1 pack chocolate Snack Pack Pudding 
1-1/2 bars melted Mexican Chocolate, cooled (Abuelita)

Whip the butter till light in color, add the sugar, whip until smooth and lighter.
Add the pudding and whip again, till fluffy, add the cooled melted chocolate, and whip till smooth
Place in a pastry bag to pipe onto cupcakes

This will not be a smooth Frosting it will have a lil crunch
