Butterscotch Cupcakes

Butterscotch Cupcakes

Preheat an oven to 350oF
Grease and flour a 12 capacity cupcake pan

    1 1/2 cups flour
    2 t baking powder
Dash Salt

Whisk the above together in a bowl

    1 cup sugar
    1/2 cup butter
    2 eggs
    2 t vanilla
    1/2 cup milk
1 t Butterscotch Flavoring 

Beat the above in a bowl until smooth, add the flour mixture and once again beat until smooth.
Spoon evenly into the pan and bake 30 minutes.


2 sticks Unsalted Butter
1 tub snack pack Butterscotch pudding
1 cup confectioners sugar
Yellow, Red and Caramel Coloring
1/4 t Butterscotch Flavoring

Whip the butter till light in color, add the sugar, whip until smooth and lighter.
Add the pudding and whip again till lighter in color.
Add the food coloring till it looks like butterscotch pudding
Place in a pastry bag to pipe onto cupcakes.
