Retro Recipe Redo #13 Jell-O Marshmallows


 Marshmallows made from Jell-O!

Retro Recipe Redo #13 Jell-O Marshmallows
Real old fashions marshmallows have Egg Whites and Gelatin. So this is technically a Retro Retro Recipe Redo.

2 cups sugar
2 THREE ounce packages Jell-O (I used Lime)
1-1/2 cups water
4 t Egg White Powder
1/4 cup warm water
Dash Cream of Tartar

Mix the 

Mix the Egg White Powder, Cream of Tartar  and the warm water in a stand mixer and turn it on high and whip it into stiff peaks.
While it whips mix the water, sugar and Jell-O in a large pot and ring it to a boil on high then turn it to medium and let it boil till it registers 220-230 on a thermometer, Dont let it boil over.
Pour it HOT slowly into the egg whites and let it beat till it becomes visibly thick, and goes way past the stiff peak stage into the marshmallow fluff stage. This can take 20 minutes.
If you want add some extra food color, My lime Jell-O turned pretty white after whipping.

So thick its holding its deep well shape.

Mix
1 cup corn startch
and
1 cup confectioners sugar



Lightly spray a high sided cookie sheet or a sheet cake pan with Pam then generously coat the pan with the dry mix.
Pour in the marshmallow and level off.
Let it dry for 2 hours
Dust the top heavily with confectioners sugar.
Unmold onto a large plater or other cookie sheet and dust again with confectioners sugar. Let dry  completely until its sliceable
Cut, Toss in more confectioners sugar and store in a airtight box
