Spicy Jerk Chicken And Watermelon Rind Stir-Fry

1 Lb Chicken Breast Cut in strips
Watermelon Rind (from one quarter of a personal sized Watermelon)
1/2 t Salt
1 t White Vinegar
3 t Grace Brand Jerk Seasoning
1 minced Scotch bonnet (optional)
Multi Colored Pepper Strips from 3 half peppers
1 large Onion, sliced
Dash of Thyme
Oil

 Toss the chicken with the Jerk Seasoning and set aside

Peel the Watermelon Rind and cut into strips.
Place in a bowl and toss with 1/2 t salt and a teaspoon of white vinegar. Let sit 10 mins.

Put some oil in a pan and saute the chicken on both sides until almost done transfer to a plate.

Saute the onion and peppers and watermelon rind until tender crisp, add the scotch bonnet and stir thoroughly, add the chicken and combine all, cover and cook 3-4 mins.

Serve

For an extra punch of flavor drizzle it with my
Watermelon Syrup
