Retro Recipe Redo #7 Kool-Aid Meringue Pie



Retro Recipe Redo #5 Kool-Aid Meringue Pie
  1-1/2 cups sugar sweetened Cherry Kool-Aid Mix
  2/3 cup water
1/4 cup cornstarch
  6 Eggs
 Using a hand mixer, mix the above together thoroughly in a metal bowl, then place the bowl over a pot of boiling water and whisk continuously till it's hot and thickens (it must come to 160f to be safe) 
Remove the bowl from over the pot and add
1 stick of Butter, DICED
Stir till it totally melts into the Kool-Aid mixture, then let it cool to warm, then pour into
a Graham Cracker Crust or a prebaked regular crust. Chill till firm.

I prefer to use dried eggwhite powder for meringues for food safety.

1/4 cup Deb El brand Eggwhite powder
1/3 cup sugar
2 dashes Cream Of Tartar
3/4 cup Water

Put the eggwhite powder and water in a bowl and whip it on high speed for about 2 minutes, add the cream of tartar. Then drizzle in the sugar and beat til stiff peaks form..

Top the pie up with  the meringue and pop into a preheated 400oF oven until its golden brown on top 10-15 mins) and then let stand on the counter to cool and then serve.
