Whole Grain Mochi

1 package Dried Apricots
Water
1/4 cup Sugar

Soak the apricots in a bowl in boiling water for an hour.

YOU MUST HAVE A VITAMIX

Make the Whole Grain Brown Rice Mochiko


Pour the rice in the Vitamix.
Turn the dial to 1, set the machine to Variable, turn it on and counting to 10 turn it up to 10.
Let the machine go for 2 minutes.
When it is done pour it onto a plate to cool.
When its cool, measure out 1 cup of this flour

3/4  cup water
1/3 cup sugar

Then pour it into a bowl with the sugar and water and mix thoroughly.
Put plastic wrap over it and place in the microwave for 1-1/2 mins, remove and stir, Put the wrap back on and microwave again for 1 to 1-1/2  more minutes, stir thoroughly Put the remaining flour in a bowl and put plastic gloves on (CAREFUL IT WILL BE VERY HOT) and pull balls off of the dough dip in the flour in the bowl and then flatten out and stuff with an apricot ball and pinch to close and shape...
Makes 5-6 Mochis
