Restaurant Style Crab Cakes


MMMMMMMMMM! So good!


Restaurant Style Crab Cakes

4 pounds Jumbo Lump Crabmeat picked over
2 cups Celery chopped fine
1 Onion chopped fine
1/4 chopped Red epper
1 cup Bread Crumbs
1-2 t Old Bay
Salt and Pepper

All mixed up
---------------------------

THE MIX:
 (you can use this for anything)
1 12 ounce can Evaporated Milk
6 Eggs
2 cups Mayo
Salt and Pepper
1/4 cup Worcestershire Sauce
1/2 cup Cracker Meal

Cracker Meal and Bread Crumbs for dipping

Whisk the mix up till smooth, pour enough (YOU WILL NOT NEED IT ALL)  over the
crab mixture to make wet, roll into a lil larger
than golf ball sized balls, and flatten, dip all
in cracker meal refrigerate on sheet to set up crumbs



Take out, dip in water, coat with bread crumbs,
Dust with Old Bay
, fry or bake in oven.

I like to grill them in the flat griddle plates of my electric "George Foreman" style grill.

Dust with Old Bay

Serve with tartar sauce and lemon...Or on a bun as a samich.

Makes 20 or 25


To make one fourth the recipe

1 lb crab
1/2 cup celery
1 tiny onion
1/4 of a chopped red pepper
1/4 cup bread crumbs


1/3 cup evap milk
2 eggs
1/2 cup mayo
1 T Worcestershire
1 oz cracker meal
