Night In The Tropics Upside Down Cake

Starfruit
Coconut Beverage Cream

    1 cup sugar
    1/2 cup butter
    2 eggs
    2 t. Rum flavoring
    1 1/2 cups flour
    2 t baking powder
Dash salt
   1/2 cup milk

    Blue food coloring 

Preheat oven to 360oF Grease a small rectangular pan.
Slice the starfruit and arrange it in the pan.
Drizzle with Coconut beverage cream.

Sift the flour, salt and baking soda together in a bowl.
Put the butter, sugar, eggs, rum extract and milk in a blender and blend tll smooth.
Add the flour and blue coloring and mix till smooth.
Pour over the fruit and bake for 40-45 mins until a toothpick comes out clean.
Invert onto a platter and serve...
