Thai Hummus with Charred Scallions and Crispy Fried Shallots





 Thai Hummus with Charred scallions and Crispy Fried Onions

1 can Chickpeas, drained 1/3 cup liquid reserved
2 heaping T Tahini
1/4 cup olive oil
2 T nam prik pao paste
4 T lime juice
5 scallions
1 teaspoon salt
1/4 cup fried shallots (available in Asian Mkts)
Sriracha (optional)
2 T dry roasted chopped peanuts (optional)

Spray the scallions with oil and broil till they char and get limp. rough chop.

Place the chickpeas, tahini, lime juice, salt and olive oil in a Vitamix and blend till silky smooth.
Adding some reserved liquid if its needed to get things moving.

Pour into a serving bowl and lightly stir in the Nam prik pao so you see stripes.

Strew the peanuts, shallots and charred scallions over top. Drizzle with Sriracha if desired.

Serve with broken puffed tapioca and sesame sheets (available in Asian mkts). Shown below.

Just buy them and pot one in your microwave for 1 minute, they puff up and get crunchy)
