Salad Soup

I made this cause I love salads but sometimes I just dont like all that crunching (I knowww, its almost a Seinfeld episode)

Salad Soup

Combine all of the following in a large pot and bring to a boil

1 package Knorr Hot and Sour Soup Mix
1 packet Swanson Vegetable Broth
 1/2 cup any Italian Dressing
8 cups water

Reduce the heat to medium, then add the following and simmer 10 minutes

6 radishes chopped
1 small onion diced
2 mini cucumbers diced
1 large carrot diced

Add the following and simmer 4 minutes

2 tomatoes diced

1/2 Bagged Italian salad Mix (must contain ESCAROLE & RADDICHIO)

2 T olive oil

Serve in bowls with 

Croutons
Shredded Cheese
Diced Avocado
Bacon Bits
