2 pounds various boneless chicken parts, (Breasts and thighs) pounded thin
1/2 cup flour
1/2 cup potato starch
1 t salt
1/2 t pepper
Mix the potato starch with the salt and pepper, set aside momentarily
Put the chicken and eggs in a big bowl, put on rubber gloves and mix well add the potato starch and mix well.
Fry in sufficient oil until golden and crispy, drain on paper towels. Sprinkle with salt while hot.
1 Pkg Lemon Meringue pie filling powder (Durkee)
1/4 cup fresh lemon juice
1/3 cup White Miso
1 T fresh grated ginger
Prepare the pie filling according to package directions for pudding add the lemon juice, stir till thickened to a dessert sauce like consistency, let cool then add the miso and ginger.
Hot & Cold Slaw
6 cups Very Finely shredded cabbage
1 bunch Mint leaves
1/3 cup mayo
Wasabi Powder (to taste, I used 1 teaspoon)
1/2 teaspoon mint extract
1/4 cup Sugar
1/2 cup lime juice
Puree the lime juice and mint and mint extract
Mix the wasabi powder and sugar with the regular mayo, then add 2-3 T of the mint/lime mixture, toss in the cabbage.
Serve a tongsfull of the cabbage on the side of the plate, half cover with a chicken cutlet, then spoon the sauce over the chicken.
Serve with Steamed rice
Sprinkle with black sesame seeds
