Winter Time Vegetable Soup
2 cups dried Goya Purple corn
2 t baking soda
water
Put the corn and water in a pot with the baking soda and bring to a boil and let boil 1 minute. Cover and let stand overnight.
In the morning drain, rinse and pressure cook for 2 hours on BEAN (medium)
Then taste them, they should be chewy, if they are still hard pressure cook for 30 mins more (etc)
Drain, and rinse.
1 cup purple potato, diced
1 cup Purple Carrot, Diced
1 cup of the above cooked purple corn
Cook the above separately in a small pot, until tender, drain and set aside.
Lets construct the main pot of soup
4 color peppers, chopped
1 Onion, chopped
2 cloves pressed Garlic
Fry the peppers, onion and garlic in a large pot till translucent
Then add
8 cups Chicken Broth
1 packet Ranch
3 packets Cream of chicken soup
The meat from 2 Smoked Turkey Drumstick
1 cup Niblets yellow corn
1 cup Niblets white corn
1 cup Orange Carrot, Diced
1 cup white/yellow carrot, diced
1 cup sweet potato, diced
1 cup parsnip, peeled and diced
2 t salt
1 t pepper
2 T liquid smoke
1 t red pepper flakes
2 T Sherry or Malt Vinegar
1/2 stick butter
Simmer this altogether until tender
Then add
2 cups cooked Barley
Serve this soup with a ladle and top with the purple veggies you set aside from earlier
Top with sour cream and chives and enjoy with Garlic Bread
