Island Skillet Lime Corn Cake

 


The lime and coconut flavor shines thru this corncake

 

 

Island Skillet Lime Corn Cake


2 cups corn meal (toasted in a frying pan till golden)
2 cups flour
2 cups sugar
7 eggs
1 cup coconut milk
1/2 t salt
3 sticks butter, melted
3 t baking powder
2 t Lime powder
8 drops Lime Oil
Tajin
 
 
PHO to 350F
 
Grease a large Skillet with butter.
 
Buzz the cool cornmeal in a Vitamix for 1 minute on high, set aside.
 
Beat the sugar, Coconut milk and eggs, then beat in the butter, Lime Oil and Powder

Whisk the Cornmeal, Flour, Salt and baking powder

Mix both together completely and pour into the pan

Sprinkle with Tajin

Bake 30 mins.
