Gazpacho Aspic


Refreshing!

Gazpacho Aspic

Half a deseeded Chopped Tomato
1/4 cup Chopped Red Onion
1/2 Chopped Green Pepper
1/2 Chopped yellow pepper
1 t  chopped jalapeno
1 T Cilantro leaves, UNCHOPPED
1 T Lime juice
4 drops Lime Oil
1 packet Gelatin
1/4 t salt
2 T sugar
1 cup boiliing water
1/2 cup water mixed with ice to make 1 cup total


Dissolve the gelatin in 1 cup boiling water, add the salt, sugar, lime juice and lime oil
Add the ice and water and stir until it thickens slightly. Remove extra unmelted ice.
Add everything else, and chill till firm,
Serve.
