Retro Recipe Redo #11 Chewy Bubble Gum Cake (A Healthier Hawaiian Butter Mochi)


This is a cake with an interesting texture, but addictive...
Yes this is a Hawaiian Butter Mochi Cake, but its my HEALTHIER spin on it, with WHOLE GRAIN Mochiko, 1/4 less sugar and fatfree milk So you will feel confident eating more than 1 tiny slice ...
I made this Bubble Gum flavor, but you can make yours vanilla, pina colada, or any flavor...

Retro Recipe Redo #11 Chewy Bubble Gum Cake (A Healthier Hawaiian Butter Mochi)

 
2 Cups Brown Rice Mochiko (method below)
5 Eggs
1 stick Butter, melted
1 T Baking Powder
1-1/2 cups Sugar
1-1/2 cups FF Milk (or Coconut BEVERAGE milk)
2 t Bubble Gum Flavor (see note)
Several drops Pink Food Color

Preheat oven to 375oF

Grease a  9 x 13 pan.

Mix all of the above together till smooth, pour into the pan and bake for an hour


The Type Of Brown SWEET Rice you are looking for

Brown Rice Mochiko

4 cups Brown SWEET Rice
A Vitamix

Place the rice in the Vitamix and set it to Variable and #1 then turn it on and quickly turn it up to 10 and let it run for 3 minutes.
DONE


NOTE No two Bubble Gum Flavorings are the same, some you just need drops, others you need teaspoons...Adjust for YOUR brand.
