Roast Winter Veggies With Spicy Maple Glaze



Warm Sweet and Spicy

 Roast Winter Veggies With Spicy Maple Glaze

4 different types of Potatoes (peeled and cut with leaf cookie cutters)
Any Orange Fleshed Squash, peeled, degunked and sliced
Tri color carrots (Trader Joes or you can buy baby ones at some grocers)
Red onion 
White Pumpkin
Dried Mandarins (Trader Joes)
Craisins

Cut enough vegetables for 2 cookie trays.
Place them all  in a big bowl and toss with

4 T melted butter
2 T Olive Oil
1 t salt
1/2 t fresh ground black pepper

Preheat the oven to 425oF

Bake half an hour

After a half hour toss in half a bag of baby spinach leaves and rebake for 5 minutes.
Remove from oven and drizzle with

Crushed Apple Chips
2 T Butter, melted
1 T olive oil
1/4 cup Maple Syrup
1 t Chipotle Powder
Salt and Pepper


Serve on a platter

NOTE: Unfortunately the potatoes I so carefully and lovingly cut out with cookie cutters DONT EVEN SHOW IN THE PICTURE! OMG IM SO UPSET! I gifted this to a friend so I cant retake it.
