Artisanal Goodies #2 Tri Color Carrot Cake


This was supposed to be a Spring Recipe, but I had to put it out NOW, cause it is too pretty not to do it now,



Artisanal Goodies #2 Tri Color Carrot Cake

Go to Trader Joes and go to the produce section and look for bags of their Tri-Color Carrots that have 3 carrots of each color buy as many as you will need to get three medium carrots of each color.Peel and cut each carrot into 4 pieces

Preheat the oven to 350oF

Spray 3 identical round cake pans with baking spray.

Melt 3 sticks of butter in 3 different bowls

Also

In three large bowls place 1-1/2 cups flour
1 cup sugar
1 T Baking powder
1/2 t cinnamon
1/2 t allspice
1/2 t Nutmeg

Whisk them all together, thoroughly.

Start the lightest YELLOW carrot cake first

In a Vitamix place the yellow carrots,
2 Eggs and one bowl of the melted butter.
Process on high ome minute till smooth
Pour into one of the bowls of flour, mix thoroughly, pour into one of the greased pans.

Rinse out the Vitamix, then repeat with the ORANGE CARROTS, then the PURPLE CARROTS.

Place all in the oven and bake for 45-50 mins or until a skewer comes out clean.
Let cool completely

Decorate with

3 cans cream cheese frosting
crispy dried carrot chips, crushed
