Sugar Free Reduced Carb High Protein Cornbread


Preheat an oven at 350oF
Grease a loaf pan

Mix

1-1/2 cups Quest Baking Mix
1 cup Sukrin Defatted Almond Flour
1 T wheat gluten
2 T baking powder
1/4 cup Splenda
1 t salt

Mix all together in a bowl

1/4 cup coarsely ground skinless urad dal, soaked in boiling water then drained (for texture)
4 eggs
1/2 cup cooled melted butter
1-1/3 cup water
1 t Amoretti Sweet Corn Extract
1/4 t Amoretti Popcorn Oil

Whisk the above together then  add  to dry ingredients, mix thoroughly and pour into pan and bake 30-45 mins or until a toothpick comes out clean

Eat.

Add more Splenda if you are Southern and want a slice in a glass of milk
