Low Carb Japanese Omurice





Low Carb Japanese Omurice

2 sleeves or 1 cup loose Mannanhikari
2 cups water
1 T mochiko flour (optional)

Put the above in a rice cooker and cook on WHITE RICE.

4 eggs, scrambled in a bowl. divided

1 cup chopped grilled chicken thighs
1 cup frozen cooked peas and carrots
1/4 cup onion, chopped
dash garlic powder
oil
1/4 cup Reduced sugar ketchup
1/2 t chicken boullion powder


Fry the onion in a lil bit of oil til transluscent
Add the chicken veg and garlic powder and stir to heat thru, add thee ketchup and boullion and stir till heated thru.
Remove from heat and then cook the eggs in a new pan.

To make the pancake eggs

Heat some butter or oil in a nonstick skillet
Pour in 2 eggs and cook til set on one side, then flip the
 egg pancake to just cook on the other side then slide onto a plate
Make the other eggs the same way.



Pour half the "rice" mixture on 1 pancake egg, then fold and slide over, and then top with more ketchup and repeat for the remaining egg and serve.
