Ackee and Saltfish Mon!


Let's make Jamaican Food Mon!
(Okay I'll stop I know its cliche)



Ackee and Saltfish

1 tomato chopped
1 green pepper sliced into strips
1 onion sliced
3 garlic cloves smashed and chopped 
1 chopped Habanero or Scotch Bonnet pepper  ( I subbed a Jalapeno)
1 pound salt cod
1 tablespoon fresh thyme
! can ACKEE drained.
Cooked rice and or fried Plantain
NO SALT NEEDED!

Soak the salt cod in water in the fridge overnight, then boil in a big pot of water for 20 mins, remove to a plate to cool, then flake up into chunks, removing any bones.  Set aside.

Fry the onion in some oil, till it gets a lil color, add the garlic, fry a moment, then add the green pepper and fry about 3-5 minutes. Add the Scotch Bonnet, then the thyme  and tomato , fry a moment. 
Add the fish and mix and fry about 3 minutes.
Lastly add the Ackee and toss gently as ACKEE is delicate.
Let it warm thru a few moments then serve with rice and or fried plantain quarters


Ackee and Saltfish is the National dish of Jamaica. 
Ackee is a fruit that grows there, its poisonous if eaten raw, so it must be cooked.
Its also great in souffles and other places it can shine in delicate glory
