St Pat's Dinner






St. Patty's Day Dinner




1 or more Nathan's corned beef briskets w/ seasoning packs

Place the corned beef(s) (and seasonings) in water to cover
bring to a boil, reduce heat and simmer 3-4 hours or until tender,

Serve with your choice of the below two accompaniments and fresh shelled peas.

Cole Slaw
(not shown)

8 cups cabbage, shredded
1/2 cup shredded carrot
2 Tablespoons grated onion
1/4th cup sugar
 salt and FG pepper
1/4 cup milk
1/2 cup mayonnaise
1/3 cup buttermilk
2 tablespoons vinegar
2 tablespoons lemon juice

Combine all the dressing ingredients then 
Add the cabbage, carrots, and onion, and mix well.

Chill and serve


Colcannon

You can make this two ways

Traditional Style

3 Cups Cooked, Seasoned Mashed Potatoes (with milk and butter added)
1/4th a head Cabbage chopped large and lightly Steamed
4 steamed Scallions, cut into 2 inch lengths
 Corned beef drippings
Salt And FG Pepper

Mix and eat

 (Its not supposed to be pretty, just delicious)

 Or you can fry them like bubble and squeak style

3 Cups Cooked, Seasoned Mashed Potatoes (with milk and butter added)
1/4th a head Cabbage chopped large and lightly Steamed
1 medium Onion Chopped
1/4 cup Corned Beef Drippings/or Butter (skimmed off the top of water)
Salt And FG Pepper

Mix the Potato and Cabbage well, put 1/2 the drippings in a large Frying pan
and fry the onion til light brown, add them to the potato/cabbage mixture Then
fry the whole thing in a greased pan til brown on one side then Flip and fry
the other side again till brown, let it look ugly just brown it and eat it!
Season thru-out!
YUMMY!

It is traditional to hide lucky coins in it for the kids to find, but I dont do that.

Dessert and a Tipple-
Okay, the measurements may not be exact as I never really measure,
but here goes.

White Chocolate Mint Chocolate Chip Pie
(Not Shown)

1 pre-made Oreo crust
2 bars of Lindt white chocolate
1 pint heavy cream
2 cups melted Green's (or Breyers) mint chocolate
 chip ice cream
1 package jello vanilla instant pudding
a dash mint extract
green food color

Put 1 cup cream in a pot over med heat, let it just come to the boil,
take off and add the Lindt. stir til melted. Put ice in a bowl and put the pot on the ice. stir occassionally til
thickened, then whisk til it gets really thick like frosting, spread this on the bottom of the crust. meanwhile mix the ice cream, pudding, extract, food color (to your Color pref) and let sit to thicken, whip the rest of the cream. fold 2/3rds in to the ice cream mixture. Spread this on top of the white chocolate top with more whipped cream, chill about 3 hours.
 Serve.


Leprechaun Sex

Fill a shot glass 1/2 full of Creme De Menthe,
add a dash of Irish Cream on top, stick a tiny gherkin
 in the center.
