This pie is insanely lemony. Its like eating a Lemon Drop Candy....
Sour Lemon Drop Pie
4-5 Seedless Lemons (Aldi and others) boiled whole for 3-5 mins, Cooled, then sliced thin
2 Crusts
Mix all the following in a bowl
4 eggs
1 cup sugar
1-1/2 cup light corn syrup
2 T butter, melted, cooled
1 t vanilla
1 cup sugar
1-1/2 cup light corn syrup
2 T butter, melted, cooled
1 t vanilla
1/4 t salt
Spray a pie plate with non stick spray. Put one crust in the pie plate
Add the sliced Lemons and then pour the mixture in the bowl over all.
Top with rest of crust, seal, flute and poke steam holes and bake at 425F 10 minutes, then reduce the heat to 350F for 55 mins.
Tent the pie with foil midway.
Let cool completely, for about 4 hours before you cut it and eat it.
You can also make this with Oranges, Limes, or Ruby Red Grapefruits..
Serve with Vanilla Ice Cream
