Sticky Jamaican Chicken
Do not buy skinless boneless chicken
1 quart water
1/4 cup Grace Jerk Chicken seasoning
2 T salt
1/2 cup sugar
6-8-10 whole Chicken Wings
6-8-10 chicken thighs
6-8-10 Chicken Drumsticks
Brine the chicken overnight in water, salt, sugar and jerk seasoning.

Remove, pat dry
Deep fry in 330oF oil, till the fat in the skin is 1/2 rendered. Set aside.

3 T Grace Jerk Chicken seasoning
1 large Onion
3 cloves garlic
1 can crushed pineapple
1 T salt
1 t red pepper flakes

Puree the onion, garlic, jerk seasoning, pineapple, red pepper flakes, caramel, coconut vinegar and Rice syrup.
Simmer it in a pot for 5 mins to cook thoroughly
Set aside
2 large onions, sliced
1 chopped green pepper
1 minced habanero or 3-4 jalapeno
3 sprigs Thyme
3 scallions, chopped
Caramelize 2 large onions with chopped green pepper, minced Jalapenos, thyme and
scallions in butter and oil.
Put the fried chicken in a large roasting pan and pour over half the sauce.
Then top with the caramelized veggies.
Cover with foil and bake at 350oF for one hour.
SERVE WITH NAPKINS
