Green Tomato Basil Pie
3 large hard green tomatoes
1 cup water
3/4 cup sugar
2 t cream of tartar
2 T butter
1 T lemon juice
1 t cinnamon
2 T potato starch
3/4 cup sugar

1 T fresh basil, chopped
Store bought Pie Crust
Put the pie crust in the pie plate.
Slice the prettiest tomato into thin slices and deseed them.
Deseed and chop the rest of the tomatoes and place these in the bottom of the pie crust. Then lay the prettiest slices on top to cover.
Boil the rest of the ingredients in a pot, then pour this over the tomatoes and place in a 400 degree F oven for 15 mins, then lower the heat to 350 and bake an hour
1/2 cup flour
1/2 a stick butter
1/4 cup sugar
Mix all the above and strew over the pie halfway into cooking.
Serve.
Note: tent the pie if it starts getting too brown
