Kimchied Aromatics
2 Elephant Garlic Heads, peeled
1 "hand" of Ginger
1/2 a large sweet Onion
4 Scallions, minced
1/4 cup Fish Sauce
1-1/2 T Kosher Salt
1/2 cup Red Pepper Flakes
Slice the garlic, Onion and Ginger very thin and toss together in a bowl, sprinkle on the salt and toss, let sit 1 hour.
Squeeze out the water and keep it for seasoning or discard
Toss everything with the scallions, fish sauce and pepper flakes and pack into a jar and let sit
on the counter for a day before refrigerating.
Chop and eat as a condiment
