Mexican Pesto
1 packet smoked Sun Dried Tomatoes soaked in boiling water then drained
2 T Pickled Jalapenoes
2 cloves Garlic
1/3 cup Pecans
1/2 cup Parm
1/2 t cumin
1/2 cup Extra Virgin Olive Oil
Process til smooth in a Vitamix or Food Processor.
Serve over pasta with corn and black beans
