Pits Of Hell Hummus
1 cup Black Chick Peas
1/3 cup Black Tahini
The juice of 1 lemon
2 T pickled Jalapeno brine
2 t Black Garlic
2 cloves fresh Garlic
1/3 cup Olive Oil
1 t Salt
2 good shakes Pepper
Chili Oil
Wash and soak the chickpeas for 24 hours, drain and pour into the Instant Pot and cover with fresh water and close and seal and cook 60 mins on medium.
Reserve 2 cups cooking liquid and then Drain and cool.
Pour into a Food Processor and process till smooth (8-10 mins), using cooking liquid as needed
Then add the Tahini, the garlics, Lemon Juice, Jalapeno brine, the salt and pepper and buzz till smooth, then drizzle in the olive oil.
Taste, adjust
Spoon into a bowl, drizzle with the chili oil
