Keto PB&J Muffins (High Protein, Zero Flour, Zero Gluten)

 
Soft, springy and delicious peanut butter cake with jam inside.
What could be better
 
 
Keto PB&J Muffins (High Protein, Zero Gluten)
 
 
Preheat the oven to 350oF
Place cupcake liners in a muffin tin

Sift the following together, into a large bowl

3 cups Sugarfree Peanut Powder (PB2Brand is sugarfree)
    4 t baking powder
1 t salt

More and more Im utilizing the blender/Vitamix cake making method, its just so simple and easy and gives the same result...

    1/2 cup Allulose
1/2 cup Monkfruit
    2 stick butter, softened
    4 eggs, room temp
    1 cup milk, room temp
    1 t vanilla

Just put all the wet ingredients above in a blender/Vitamix and process at high for 1 minute.

    Then pour into the bowl with the dry ingredients then mix till smooth, pour into the pans and bake for 25-30 mins.

Let cool completely.
 
 
1 jar sugarfree Raspberry seedless jam, stirred

With a pastry bag stuff the cupcakes with the jam and
