Swiss Mac And Cheese


Slightly Americanized Version of the European classic...
Swiss Mac And Cheese

Preheat oven to 350oF


5 cups cooked Macaroni
2 cups loose precooked Hash Browns
6 strips cooked bacon, chopped
1/4 t salt
Dash Pepper

Toss all of the above together in a greased casserole dish, set aside
4 T flour
4 T butter
1/3 cup sherry
1-1/2 t salt
1/2 t pepper
4 cups milk
4 cups grated Swiss Cheese

 Melt the butter, flour salt and pepper together, in a pot till bubbly, whisk in the sherry and bubble the alcohol out, then whisk in the milk, whisking constantly let come to the boil then whisk in the cheese and whisk til smooth.
Pour over the macaroni in the dish and stir to combine.

Bake about 20 mins until bubbly.
Top with

1 cup shredded Swiss Cheese
1 package French's Fried Onions*
Mixed

Put back in the oven till golden.
 Serve with Apple Sauce


* The Americanized part, its usually sauteed, caramelized onion
