Creamy Carrot Top Soup


3 T olive oil
1 large onion chopped
1 large carrot chopped
4 cloves minced Garlic
2 scallions, chopped
1 large Russet potato, diced
1 box chicken stock
the tops from 2 bunches carrots, Washed
1/2 stick butter
1/4 cup heavy cream
4 T lemon juice
 Salt and Pepper


Saute the onion, carrot, potato, garlic and scallion in a pot until softened
Season.
Add the stock and bring to a simmer, cook 10 mins.
Add the carrot tops and cover and cook 3 mins
Uncover and carefully ladle half of the soup into a Vitamix and carefully blend with a towel covering the top of the vitamix.
Puree the second half.
Pour all back into the pot and simmer on medium 3 mins.
Add the butter and heavy cream.
Brighten it up with lemon juice
Stir to combine.
Serve with olive oil drizzle and fried garlic
