Retro Recipe Redo #19 Italian Chili
2 large cans crushed tomatoes
1/4th cup Olive Oil

1 green pepper chopped
1 red pepper chopped
1 yellow pepper chopped

8 cloves garlic chopped
1 T Fresh oregano chopped
1 T Fresh basil chopped
1 26 oz can beef broth
1 cup tomato paste

1-1/2 pound ground chuck
1-1/2 pound sweet Italian sausage,loose or cut out of the casing

1 pack mini Hormel Pepperoni
1 can white cannelloni beans drained
1 t to 1 T Red Pepper Flakes (depending how spicy you want it)

Fry the ground chuck and Italian sausage and pepperoni in a little oil till seared and brown and broken up. Remove it to a plate.
Reduce the heat to medium.
Add the olive oil to the hot pan and saute the onion, and peppers in olive oil in a large skillet till
translucent,
Season with salt and pepper.

Simmer til reduced.
Add the tomato paste, stir, let simmer 10 mins

Check the seasoning and add more salt, pepper, or pepper flakes if desired
Finally add the beans and stir to cook thru
Serve with Parmesan risotto and and topped with mozzarella and Parm shreds
