Thai Watermelon Salad

So refreshing! The shallots and fish sauce dial down the sweetness.
Thai Watermelon Salad

1/2 a seedless Watermelon, cubed and CHILLED
1/2 can Thai Fried Shallots or French's fried onions
1 cup washed mint leaves
1 cup washed Thai Basil
1  cup washed cilantro leaves
1 cup chopped roasted unsalted peanuts
1 T chopped Thai chilis

Toss all in a huge picnic bowl

1/4 cup  fresh Tamarind Paste
1/4 cup Lime Juice
1 T Chopped fresh ginger
1/4 cup Palm Sugar
1/4 cup Fish Sauce

Shake all of the above in a jar and pour over the fruit. herbs and peanuts,
Serve Immediately


Fresh Tamarind Paste the way it should look, do not use concentrate
