Warm Mango Chutney Cake With A Touch Of Curry

A cake chock full of mango chutney, trail mix and granola, and a slight hint of curry, served warm its delightful.


Warm Mango Chutney Cake With A Touch Of Curry

2 Cups sugar
3 cups flour
1 cup butter
4 eggs
1 cup milk
4 t baking powder
2 t curry powder
1/4 teaspoon Salt
big splash vanilla
1 cup mango chutney
 2 cups trail mix (no chocolate) I love Wegmans Beach Mix
1 cup granola
 1/3 cup flour to dust the trail mix and granola

Preheat an oven to 350.

Grease a 9 X 13 sheet pan

Cream the butter and sugar together, add the eggs, then the miilk then vanilla and then the mango chutney

Sift the 3 cups of flour, baking powder, curry powder and salt, together

In a bowl, toss the trailmix and granola together then toss in the 1/3 cup flour to coat, shake off the loose flour.

Add the flour baking powder and curry powder mix to the wet ingredients then fold in the trail mix.

Pour in the pan and bake for 45-50 mins, or until a bamboo skewer inserted in the middle comes out clean.

To "frost" drizzle it with Coconut Beverage Cream, serve warm with Chai

NOTE: If your trail mix already has granola use 3 cups trail mix and omit the extra granola....
