Chicken Aglio e Olio







Chicken Aglio e Olio

A 3-5 lb chicken cut up, or prepackaged parts
(I buy a Perdue Oven Stuffer Roaster and get 14 pieces out of one)
1/2 cup extra virgin olive oil
2 tablespoons butter
3 large onions sliced into rings
all the cloves of an entire head of garlic chopped
1 T paprika
salt , pepper
chopped fresh parsley

Brown the chicken in a large skillet, with the olive oil, salt and
pepper, remove to a plate add the butter to the oil and saute the
onion rings until lightly golden, add the garlic saute a few minutes more,
add the paprika toss to coat , saute a little more then
place everything in a large roasting pan, toss to coat, then put it
into a 350 degree oven and cook for about 1-1/2 hours
Put on a platter with the juices and oil, Sprinkle with Parsley and tear in with gusto!
Have cloth napkins handy.
Wipe your chin!
Serve with crusty Italian bread or Aldi Garlic Bread
