Naturally Fermented Philadelphia Hoagie Sweet Peppers.
1 red bell pepper, deseeded, sliced in strips
1 yellow bell pepper, deseeded, sliced in strips
1 orange bell pepper, deseeded, sliced in strips
1 green bell pepper, deseeded, sliced in strips
1/4 cup Salt
1/2 cup sugar
1/2 an Onion
5 cloves Garlic
2 T fish sauce
2 cups water
2 T rice flour
1 t oregano
A few leaves fresh basil
A minced Jalapeno if you want them spicy
Wash all the veggies
Put the peppers in a bowl and sprinkle with the salt and let sit for 1 hour..
Puree the onion with the fish sauce, jalapenos, basil and garlic, set aside
In the meantime put the water in a small pot and add the sugar and rice flour and whisk and cook till thick, let cool then add the pureed onion and oregano.
When the peppers have released their juice, pour HALF the juice off then add the seasoning paste and pack them into a jar or Tupperware and let sit on the counter for 1-2 days then put in the fridge.
Taste one after 24 hours, is it sour-sweet, put it in the fridge. If not, let sit out another 24 hours.
