Creamy Triple Bacon Soup


                                                                   A luscious bacon soup

 

Creamy Triple Bacon Soup

3 T flour
3 T Bacon Fat
2 Cups Milk 
2 cups chicken stock
Chopped parsley
2 Cooked diced potatoes
1 chopped Onion
2 cloves garlic pressed
Chives
5 slices Regular Bacon, cooked
5 slices Turkey Bacon, cooked
5 slices Beef Bacon, Cooked

Cubed, fried slab bacon Croutons (below)
 
 
 Melt the bacon fat in a pot, and add the onions and garlic and saute for 2-3 mins
Add the flour and let bubble. Then whisk in the milk and stock and let simmer
 till it thickens a bit. Add the chives and bacon and let simmer on med-low for 5 minutes, 
add the taters and simmer 1-2 minutes and serve with crispy bacon slab croutons and parsley...
 
 
 
 

Bacon Cubes

Lets Confit The Bacon Slab

1/2 a Slab of MEATY Bacon
2.5 lb Lard

Cut the bacon like this

Melt the lard in a dutch oven and add the bacon and put in a preheated 250 F oven for 5 hours.

Remove the bacon gently from the lard. Let the lard cool to room temp, strain the lard back into its plastic tub and put in the fridge for the next batch you make.

Fry the bacon cubes in 300 F oil in a pot on the stove till crisp, like this
