Jalapenos Rellenos


 So freaking delicious...
 
 Jalapenos Rellenos
 
20 large Jalapenos
1 block Muenster cheese, shredded
1 cup complete pancake mix
Water
Flour
 1/2 packet Taco Seasoning
1 T flour
1 egg
1/4 cup ricotta 
enchilada sauce or salsa
 
 

 
Cut a slit on the side of each Jalapeno and dig out the seeds.
Fire roast them over a gas stove or under the broiler to blister skin. remove skin and put in fridge.

Combine the Muenster Cheese with egg, taco seasoning, the Tablespoon flour and ricotta
Stuff the jalapenos and chill to firm them up.
 

 

Put a pot of oil on the stove and heat it to 250F

While waiting for it to come to temp, flour the stuffed Jalapenos, and mix the pancake mix and enough water to make a thick batter.

Dip, each Jalapeno in the batter and fry till golden, drain and serve on a plate with the enchilada sauce or salsa..
