Diet Dudhi Halwa
3 T butter
3 cups shredded, seeded, peeled Dudhi
1/2 can Evaporated Milk
1/2 Cup Nido Dried Whole Milk

Diet Carrot Halwa
3 T butter
3 cups shredded, peeled Carrots
1/2 can Evaporated Milk
1/2 Cup Nido Dried Whole Milk
Erythritol
Ground Cinnamon
Food Color
You make BOTH of these Indian sweets exactly the same.
Put the butter in the pot, saute the Dudhi or Carrot till reduced and tender, add the milk and NIDO (and food color if using) and again reduce till most of milk is gone, add the spice and the Erythritol and again reduce till it comes away from the sides of the pan.
Spoon into moulds or into a small pan and refrigerate and decorate with nuts or Varak
