Candy Corn 2 Ways -- Its Not What You Think!
2 pounds Baby Corn
3 cups sugar
3/4 cup Water
2 T lemon juice
Put the sugar, water, & lemon juice in a pot and bring it to a
boil, turn down to medium, add the Baby Corn, cover, let boil 20 mins, turn off heat, keep
covered and let sit overnight.
Turn the heat to high and let it come to a full rolling
boil for 5 mins, reduce it to medium-low and cook until
the syrup is thickened, Turn off the heat,
Remove half the corn with a slotted spoon and set on a rack over a cookie sheet and dust with sugar and let cool.
To the rest of the corn in the pan, add 3 T butter and 1/4 cup heavy cream and let boil till its becomes a dark caramel, turn off heat and fish out the corns and make clumps on non stick silicone sheets or nonstick Reynolds Wrap.and let harden
Pour the remaining Corn scented caramel into a container and use over popcorn!
Eat.
