Pineapple Coconut Cooler

 

 

1 Whole Pineapple, For garnish

1 can Pineapple rings and the juice

The juice from 2 white juicing coconuts

10 Werthers hard Caramels 

Small handful of fresh mint 

Seltzer

Put the pineapple rings and juice, coconut water, mint and Werthers in a Vitamix and buzz it.

Pour thru a sieve, into glasses. Top up with Seltzer

Serve with a Pineapple wedge.
