Carrot Ginger Souffle


 

 Serve it to your kids with ice cream! Trick em into eating lots of carrots
 
 Carrot Ginger Souffle
 
2 lb washed, peeled YELLOW carrots
1-1/2 cups sugar
1/2 T baking powder
Vanilla
1/2 T fresh grated ginger
2 T flour
3 eggs
1 stick butter, softened
few dashes salt

PH oven 350oF
Grease a casserole dish

Cook the carrots, until mashable, and cool completely
Put the carrots and everything else in a blender and blend.


Put it into the pan and bake 1 hour.
