Sweet Italian Chicken Sausage


Fry it up like a burger and serve in a bun with marinara and mozzarella


Sweet Italian Chicken Sausage

2 packages Perdue Ground Chicken (not breast meat)
1/2 cup each, minced Red and Green Pepper
1 clove garlic pressed
1 T whole Fennel Seed, soaked in 1/3 cup boiling water
1 T ground Fennel seed (optional)
1 t ground Anise
1/2 t Cayenne
1/4 cup Ouzo or Pernod
2 T sugar
1 T ground pepper
1 T salt


Mix it all together, put into a plastic bag and refrigerate 24 hours.
Cook the way you want,

Note: Try and buy the Fennel Seeds at an Indian Mkt, they are fresher, and bigger
