White Pumpkin Spice Spoon Bread

1-1/3 cup boiling Pumpkin Spice Coffee Creamer
1 cup White cornmeal
2 eggs
1 t salt
2 t baking powder
1 cup White Pumpkin Puree, room temp or warm
3 T Milk


Put a casserole dish in a cold oven, Turn the oven to 400oF.

While you are waiting for the oven and dish to heat, heat the coffee creamer in the microwave for 4+ minutes. Be careful it doesnt boil over.

Pour it into a bowl with the salt and cornmeal, mix thoroughly, then beat in eggs.

Mix the baking powder and 3 T milk, then stir into the pumpkin then quickly butter the baking dish and then combine cornmeal and pumpkin thoroughly then pour into the dish and bake 30 mins

Serve warm, with melted butter
