Crazy Corn Souffle

MMMMMMMMM, Crazy Corn to the next level!

Crazy Corn Souffle
    1 Bag Corn Muffin Mix, any non sweet brand
   1 Stick salted butter, melted
    1 regular can Niblets
    1 can cream style corn
1/4 cup chopped  red onion
1/3 cup crumbled Queso Fresco
    1/2 cup fat free or light sour cream
1/2 cup mayo
    2 eggs
2 T Tajin Mexican Seasoning

Preheat oven to 375oF.
Spray a round casserole dish with Pam

Pour the cornbread mix, Eggs, Mayo, Sour Cream, Tajin, red onion, Queso in a big bowl

Mix the corns and melted butter to cool the butter down a bit, then add to the rest of the ingredients. Pour into the prepared dish, sprinkle with Tajin

Bake 40-60 mins, until it stops jiggling in the middle, it makes its own sauce
