This is what homemade Salsa looked like in the 1980s when it showed up on plates and stores. Finely diced veggies. I think people in those days got Pico De Gallo mixed up with Salsa, Regardless, I still make diced Salsa... But I made this one white...
White Salsa
1 Jicama, peeled, diced fine
1 onion, diced fine
1 very large green tomato, microwaved, diced fine
3 Any very light green pepper (Banana or anaheim)
1 onion, diced fine
1 very large green tomato, microwaved, diced fine
3 Any very light green pepper (Banana or anaheim)
Bunch Cilantro
1 T Salt
1/4-1/3 cup agave syrup or honey (optional)
Black Pepper
1/4 cup Lime Powder (Real Lime Brand)
1 t dried garlic flakes
Put it all in a plastic tub and mix and let sit in fridge overnight.
Serve.
If you want it juicier, add a can of green enchilada sauce
