This is REAL bacon, pulled apart and dressed with a light but tasty BBQ sauce
Decadent Pulled Bacon Sandwiches
My thinking behind the light BBQ sauce was that I needed a LIGHT tasting BBQ sauce that would add all the characteristics of BBQ sauce drenched pulled meat sandwiches, but would let the bacon flavor shine thru. Lychees are an innocuous tasting fruit that will add bulk and mild sweetness to the sauce without overpowering the bacon. I was thinking of adding 2 T of regular BBQ sauce, but I ultimately chose Chili Sauce cause its not overpowering.
1 whole slab bacon (chose a slab that looks like this with lots of meat)
2 tubs lard or Bacon Up bacon Grease, 5 pounds total
Amoroso Kaiser Rolls
Light Honey BBQ Sauce
2 cans sugarfree Lychees 11 oz cans, with JUICE
1/4 cup Honey
1/4 cup Heinz Chili Sauce
2 T Rice Vinegar
2 T SureJel Pectin (Yellow Box)
1/2 t Salt
1 t dried onion
Put the canned Lychees in a blender and puree, pour into a pot with all the other ingredients and boil till its thick and syrupy.
Lets make Pulled Bacon
Cut the slab bacon into 16 chunks, put it into a large pot/Dutch Oven and cover in Lard. Place in a 250F preheated oven for 6 hours.
Pull out the chunks, cool it down and strain the lard and save for another use.
Put the chunks into a stand mixer with a dough hook and process till pulled apart. Look thru it and remove any globules of fat.
Pulled BACON! PULLED BACON PEOPLE!!
Cover with the light BBQ sauce, serve on the Amorosos with lettuce and pickles.
