3 Bacon Fingers with Dip
Chicken Fried Bacon Fingers
One whole slab bacon
5 pounds Lard
Eggs
Hot Sauce Bacon Mayo Ranch for dipping
Make the mayo ranch and refrigerate
Bacon Fat Mayo
1 cup FRESH bacon grease, room temp and liquid
2 T Lemon juice
1 T dijon or Guldens
2 T Dried Whole Egg powder
3 T Water
1/2 t salt and pepper
Put the egg powder, lemon juice and water into a tall plastic cup and mix thoroughly first, then add everything else and use an immersion blender on high to make it all into mayo. Its magic!
Follow package directions on a pack of Hidden Valley Ranch and use this bacon mayo
Add a T hot sauce and serve in a little bowl with the Bacon Fingers
Make the fingers
Slice the bacon into 2 x 4 inch "fingers".
Put it into a large pot/Dutch Oven and cover in Lard. Place in a 250F preheated oven for 5-6 hours.
Pull out the fingers, strain the lard and save for another use.
Gently pat them dry, place on a plate and refrigerate till firm again.
Put a pot of oil on to deep fry (medium heat)
Dip the fingers in Fry Flour first, then beaten egg, then fry flour again.
Deep fry till golden.
Serve with the ranch you made and maybe some Salad.
